yummy Biscuits that are easy to make


Ingredients (makes 24 biscuits)

  • 125g soft butter
  • 1/2 cup caster sugar
  • 1 teas vanilla extract
  • 1 cup plain flour
  • 1 egg
  • 1/4 cup self-raising flour
  • 1 teas bicarbonate of soda
  • 1/3 cup cocoa
  • 125g unsalted peanuts
  • 100g white choc bits

Method

  1. Preheat oven to 180°C. Line 2 baking trays with non-stick baking paper
  2. Beat butter, sugar and vanilla together with electric beaters until pale and creamy. Add egg and beat until combined. Sift flours, cocoa and bicarbonate of soda together over butter mixture. Add peanuts and choc bits and mix well.
  3. Roll tablespoons of mixture into balls. Place about 6 balls onto each prepared tray. Bake for 12 minutes. Remove from oven and cool on trays for 5 minutes before transferring to a wire rack to cool and firm completely. When cold, store in an airtight container
