This Chocolate ripple Christmas log is quick and easy to make.

Ingredients (makes 1 Log)

  • 600ml Cream
  • 1 pack Chocolate ripple biscuits
  • 5 Strawberries
  • 7 Blueberries
  • 1 tsp Vanilla essence

Method

  1. Add cream and vanilla essence to bowl. Whip with electric beater until it peaks.
  2. Place cream onto a board to create base for the log. Place biscuits upright and sandwich together with cream. Continue until there are only 2 biscuits left. Cover the biscuits with cream and smooth out to create log.
  3. Crush the remaining biscuits and sprinkle over log. Add strawberries and blueberries. Place in fridge overnight to set.

  • It looks amazing. Perhaps add a dew mint leaves for extra colour

  • My sister in law makes this every Christmas- except for the last one. Thanks to COVID! She was in isolation as her daughter tested positive on Christmas Eve

  • We used to make this years ago. an oldie but a goodie. You can dip the biscuits in orange juice or port before assembling too for a flavor boost!
