A sweet lunchbox treat.

Ingredients (makes 10 -15 balls)

  • 3 Weet-Bix, crushed
  • 1/4 cup Sultanas
  • 1/4 cup Apricots, finely chopped
  • 1 tbsp Cocoa
  • 1/2 cup Condensed milk
  • 1/2 cup Coconut

Method

  1. In a bowl, combine weet-bix, sultanas, apricots and cocoa. Add condensed milk, mixing well.
  2. Roll tablespoons of mixture into balls. Toss in coconut.
  3. Store chilled in an airtight container.

Notes

Chop and change the dried fruit as desired. 1/2 cup of condensed milk is half a 400 gram tin.

  • Another truffles version — all delicious. I’ll need to get creative with a new and different version of my own too. I promise to share.

  • I just made these at 11pm tonight as a last minute addition to tomorrow’s lunch boxes. So easy and delicious, thank you for the recipe! I used sultanas, dates and cranberries (I didn’t have apricot). My tip – just like meat balls, roll them with clean slightly wet hands. Makes the rolling soooo much easier!
