This can be modified to fit any veg or protein you want to add in, and tastes great with natural greek yoghurt!
Ingredients (serves 6)
- 1 cup shredded chicken (this time I used left over roast, no skin)
- 1/2 cup steamed greens
- 1 1/2 cups roast, diced pumpkin
- 1 packet Ainsley Harriot Mushroom Cous Cous Mix
- Make the Cous Cous according to directions.
- Add the other ingredients and mix.
- Serve into lunch sized portions and refrigerate.
