Ingredients (serves 4)

  • 4 Lebanese Cucumbers - cut the way you prefer them
  • 4 Spring Onions - thinly sliced on diagonal
  • 1/2 cup Fresh Mint - chopped
  • 150 grams Feta - crumbled
  • 1 Red onion - halved and thinly sliced
  • 1 tab Red Wine Vinegar
  • 2 tabs Water
  • 2 tabs Extra Virgin Olive Oil
  • to taste Black pepper - freshly ground
  • 1 Lemon - juiced

Method

  1. Put red onion, vinegar and water in a bowl. Mix and leave for a few minutes before draining
  2. Put cucumber, spring onion, mint, feta and red onion in a bowl
  3. Whisk together oil, lemon juice and pepper.
  4. Pour dressing over salad, toss lightly and serve

Notes

You can also add olives and or thinly sliced poaches chicken to this salad The feta can be salty so there is no need to add extra salt
