Ingredients (serves 6)
- 1 kg Sweet potato (washed thoroughy, peeled and cut into pieces )
- 1/4 cup Olive oil
- 1 t Curry paste
- 1 T Coconut cream
- Parsley to garnish
Method
- Baked sweet potato with olive oil for about 45 munites.
- In a bowl, mix curry paste and coconut cream.
- Toss over sweet potato. Serve with parsley as garnish.
