A refreshing cocktail for summer. Perfect when the kids have gone to bed, preferably drunk outside while watching the sun set and with your feet up!

Ingredients (serves 1)

  • 30 ml dark rum
  • 1 can ginger beer (reserve some liquid)
  • 1 squeeze of lime juice
  • 1 lime wedge to garnish


  1. Combine ingredients into a shaker.
  2. Pour into a glass with ice and top with the reserved ginger beer.
  3. Add lime wedge for garnish and enjoy!


To make it a virgin Dark and Stormy, substitute the rum for pineapple juice.

    • yeah i rarely drink now! i got through christmas and new year’s- dry lol. i do try to keep that away from the kids :)
