Ingredients (serves 4)

  • 1 tbs oil
  • 1 medium brown onion
  • 500g pork mince
  • 1 packet soft and hard taco kit
  • 2 x 125g cans corn kernels drained
  • 10 mini tortillas, heated
  • baby cos lettuce leaves
  • chopped grape or cherry tomatoes
  • sour cream
  • lime wedges
  • shredded cheese

Method

  1. Heat oil in a large frying pan over medium-high heat. Add onion. Cook, stirring occasionally, for 3 minutes until softening. Add pork. Cook, breaking up the mince, for 4 to 5 minutes until pork is lightly browned.
  2. Add taco seasoning and half a cup of water. Stir to combine. Reduce heat to medium. Cook, stirring, for 3 minutes until thickened and bubbling.
  3. Stir in corn and a quarter of a cup taco sauce. Cook for 2 minutes. Meanwhile, heat tacos and mini tortillas following packet directions.
  4. To serve, place warmed tacos onto a board. Fill with one or two lettuce leaves and pork mixture. Sprinkle with tomatoes. Top with a dollop of sour cream. Drizzle with remaining taco sauce.
  5. Wrap each taco with a warmed mini tortilla. Serve with lime wedges.
  6. Add sour cream and cheese between the soft and hard shells (optional).

  • I love Tacos but have never thought to try them with Pork. Lime juice is definitely a good addition. I’ll give these a try.
