Ingredients (serves 4)

  • 250g Double Brie
  • 3 Tbsp Fig Jam
  • 2 Sprigs of thyme
  • 1 Sheet of Puff Pastry
  • 1 Egg

Method

  1. Place Brie in the centre of the sheet of puff pastry.
  2. Put 2-3 Tbsp of Fig Jam on top of the Brie along with the leaves from 2 sprigs of Thyme.
  3. Brush the rest of the puff pastry with egg.
  4. Fold the Puff Pastry up and brush again with egg
  5. Place in the fan over at 180C for 30 minutes or until brown. I like to gently finish mine under the grill.
  6. Serve on its own or with crackers.

Notes

You can easily swap out the Fig Jam for Marmalade or Apricot jam.

  • Can’t say I’ve ever had fig jam before but I do love a good baked brie!
    No matter what the weather is like, it’s just a comfort food for me. Thank you for sharing this, I’ll definitely try it.

  • Oh YUMMMM! I love brie and camembert and I usually have it with cranberry sauce. Fig jam would be amazing with it. I like the idea of the pastry too. What a clever recipe.
