Ingredients (serves 4)

  • 250g Double Brie
  • 3 Tbsp Fig Jam
  • 2 Sprigs of thyme
  • 1 Sheet of Puff Pastry
  • 1 Egg

  1. Place Brie in the centre of the sheet of puff pastry.
  2. Put 2-3 Tbsp of Fig Jam on top of the Brie along with the leaves from 2 sprigs of Thyme.
  3. Brush the rest of the puff pastry with egg.
  4. Fold the Puff Pastry up and brush again with egg
  5. Place in the fan over at 180C for 30 minutes or until brown. I like to gently finish mine under the grill.
  6. Serve on its own or with crackers.

You can easily swap out the Fig Jam for Marmalade or Apricot jam.

  • Wow! Love this!

  • This baked brie looks so gooey and delicious and I am going to make it this weekend. Thank you!

  • OMG! This is my kind of a recipe, absolutely delicious! Thanks!

  • Yum!! My anniversary is this week and I’ve been trying to find recipes that feel special to have at home while in lockdown. This sounds good. I might give it a go with plum jam

    • I am going to try it with different jams too – a good recipe to modify.
