This is a fast, easy meal that satisfies growing bellies and brings back memories of my own childhood.


Ingredients (serves 4)

  • 500g beef mince
  • 500g frozen mixed vegetables
  • 1/2 Cup green's roast meat gravy
  • 2 cups mashed potato

Method

  1. Boil potatoes, strain and let steam evaporate.
  2. Brown mince and season to taste.
  3. Stir in vegetables and cook until al dente.
  4. Mash potatoes
  5. Mix up gravy and pour into beef and vegetable mix
  6. Pour beef and vegetable mixture into baking pan and top with mashed potato. Fluff up tops for extra brown bits. Or pipe on.
  7. Bake at 180°C for half an hour.

Notes

Swap out potato for sweet potato or mix mashed potato with mashed pumpkin and/or mashed carrot. Mix up the vegetables used for a different dinner. Great reheated for lunch the next day.

  • We call this shepherd’s pie and I’m not ready to break this one out again yet. It’s our winter food and whilst Victoria is feeling that way at the moment, I sitll want to enjoy my salads and summer foods… for now!
