anything left over from the fridge can be used for this recipe. Best for those lazy days when you can't be bothered what to cook and you just want to utilized whatever is on the fridge/freezer


Ingredients (serves 4)

  • 3 cups left over white rice
  • 1 tbsp butter
  • 2 tbsp oil
  • 200 grams bacon or ham
  • 1 cup frozen veggies
  • 2 eggs lightly beaten
  • 2 tbsp chopped garlic
  • to taste slat and pepper

Method

  1. In a wok saute garlic in olive oil and butter add garlic and cook until lightly brown.
  2. Add bacon or ham and frozen vegetables. stir for a couple of minutes until the meat is browned.
  3. Add the eggs and let sit for a while moving lightly to create lumps. add rice and stir continuously until well mixed. Add salt and pepper to taste.

Notes

this is my go-to meal when I feel lazy cooking and just want something to feed my tribe. very easy yet satisfying

  • Yum! I love fried rice. I’ll normally make it the day after we’ve had a roast and use the leftover roast meat in it as well!

  • This looks and sounds so simple and easy im always after meals that I can make plenty of and have leftovers and we all love fried rice and generally have all these ingredients in the fridge so will try making on the weekend.
