Easy and absolutely delicious Pumpkin soup.


Ingredients (serves 5)

  • 750g Pumpkin diced
  • 250g Potatoes diced
  • 2 medium sized Onions
  • 250ml Thickened cream
  • 3 Chicken stock cubes crumbled
  • 3 1/2 cups Water
  • Salt and Pepper.

Method

  1. Place all ingredients in a large saucepan except for the cream.
  2. Simmer until Vegetables are tender then remove from heat
  3. Blend until smooth with a stick blender
  4. Add cream and stir through
  5. Season with salt and pepper.

  • I love a good Pumpkin Soup. I have never added chicken stock cubes before, must add that next time I am making the soup.

  • I add a couple of diced apples to my pumpkin soup, along with a dash of Worcestershire sauce and a little tabasco or chilli. One of the best soups to warm up cold bodies on a cold Winter’s day.
