Super easy, super healthy this egg and spinach wrap is perfect for lunch!


Ingredients (serves 1)

  • 1 Sheet Mountain Bread
  • Handful Baby Spinach Leaves
  • Handful Carrot strips, cut using a peeler
  • 5 Kalamata olives, pitted
  • 1 Boiled Egg
  • 1 Tbsp Cottage Cheese
  • Pinch Salt and cracked pepper

Method

  1. Layer all the ingredients on a Mountain Bread and wrap. Then enjoy!

  • I’m not grown up enough to like olives. Haha.

  • It’s funny how simple this is yet I wouldn’t have thought to make it. I need to use eggs for my lunch protein more often as its expensive having meat for lunch! Great idea adding kalamatta olives
