Ingredients (serves 12)
- 6 eggs
- 1/2 cup spring onion
- 1/2 cup green capsicum
- 1/2 cup red capsicum
- 1/4 tsp salt
- Oil, to grease the tin
- Preheat oven to 180°C/160°C fan-forced and grease the muffin tray with oil.
- Beat the eggs and all ingredients in to it and mix them well.
- Add 1 tbsp of mixture for each muffin in tray and put in the oven for 15-20 minutes or until its fully cooked so a skewer comes out dry.
- Let cool in the tray or put on the drying rack and add in kids' lunchbox.
