These eggs and greens are full of goodness!
Ingredients (serves 2)
- 2 slices Sourdough toast
- 1 small Avocado, mashed
- 2 stems Kale
- 2 Eggs
- 6 Button mushrooms
- 6 Cherry tomatoes, halved
- Gently fry mushrooms and tomato in pan, meanwhile mash avocado and spread on toast.
- Steam kale and place on avocado.
- Poach eggs and place on top.
- Add cooked mushrooms and tomatoes to plate. Enjoy!
