A quick and delicious dinner using left overs! Also easy to make gluten free!


Ingredients (serves 4)

  • 2 cups veggies of your choice
  • 1 cup flour
  • 1 cup milk
  • 1 egg
  • pinch salt and pepper

Method

  1. Whisk the flour, egg and milk until smooth.
  2. Add your chosen veggies (you can add meat also) and combine.
  3. Fry until golden.

  • I always put grated pumpkin and also zucchin. I leave the skin on the zucchini and although the seeds are soft I remove them

  • I make these with corn and cold meat (especially cold roast beef or corned beef) Mum used to make them on weekends when we were kids :)
