You can make this recipe into just a cake or you can can have a light orange cake that needs no icing— it's topping of coconut meringue is baked with the cake.


Ingredients (serves 8)

  • 125g self raising flour
  • 60g sugar
  • 60g butter
  • 2 eggs seperated
  • 3tbs milk
  • 1/2 teas vanilla
  • 1 orange rind grated, I only used about 4 grates as my son is not a huge fan of orange rind.
  • 1 tbs sugar (extra)
  • 1/4 desiccated coconut

Method

  1. Beat butter,sugar and orange rind.
  2. Beat egg yolks Add egg yolks, flour, then milk and vanilla
  3. Beat the whites of egg to a stiff froth,add the extra sugar beat again the add coconut. Now you can either add this to the already done mix and stir, or you can layer the first mix then this on top of the other mix. Then bake.

Notes

I cooked mine in the phillips Airfryer XL and the cake was so moist as you can see in the photo.I did not add the topping this time as I thought I would mix it through for a change and see if it is just as nice with a bit of icing on top. This recipe was given to me many years ago from an old lady I used to know. The cake is fantastic as you can cook it two ways.

  • After writing this all down, changing gr. to cups, I find there is no baking temperature or baking time. Your reference to “old lady” I feel is inappropriate. I’ m old but would sooner be referred to as “senior” or “many years my senior”when spoken about.
