It is also delicious with goats cheese or a poached egg on toast.
Ingredients (makes 1 bowl)
- 1 bunch fresh asparagus
- 1 small cos lettuce
- 6 cherry tomatoes
- Ready made salad dressing (I like Paul Newman's Own Classic)
- Prepare and boil asparagus for 2 minutes, then drain immediately and cover with cold water. Leave in water until cold, then remove from water.
- Trim and finely cut lettuce and slice tomatoes. Place in bowl and top with cold asparagus and dress to your liking.
