Simple breakfast for my little one with avocado and strawberry.
Ingredients (serves 4)
- 1 cup Plain flour
- 2 tbs Baking powder
- 2 tbs Sugar
- 1 Egg
- 2/3 cup Milk
- 150 gr Goji berries
- A pinch of salt
- Melted butter or oil cooking spray for greasing
Method
- Sift flour, baking powder, sugar and salt in to a bowl. Lightly beat egg and milk in a jug. Using spoon, stir egg mixture and goji berries into dry ingredients until just combined.
- Heat a large non-stick frying pan over low heat. Brush with melted butter to grease. Pour 14 cup mixture for each pancake. Cook for 1-2 minutes or until bubbles start to form on surface. Turn pancake over and cook for other 1-2 minutes or until light golden brown.
- Place pancake in serving plate. Dust with icing sugar.
