Simple breakfast for my little one with avocado and strawberry.


Ingredients (serves 4)

  • 1 cup Plain flour
  • 2 tbs Baking powder
  • 2 tbs Sugar
  • 1 Egg
  • 2/3 cup Milk
  • 150 gr Goji berries
  • A pinch of salt
  • Melted butter or oil cooking spray for greasing

Method

  1. Sift flour, baking powder, sugar and salt in to a bowl. Lightly beat egg and milk in a jug. Using spoon, stir egg mixture and goji berries into dry ingredients until just combined.
  2. Heat a large non-stick frying pan over low heat. Brush with melted butter to grease. Pour 14 cup mixture for each pancake. Cook for 1-2 minutes or until bubbles start to form on surface. Turn pancake over and cook for other 1-2 minutes or until light golden brown.
  3. Place pancake in serving plate. Dust with icing sugar.
