I hope you enjoy this recipe! Really delicious. Very easy to whip up with simple ingredients you can find around your kitchen.
Ingredients (serves 8 | makes 1 Cake)
- 1/2 cup Plain Greek yogurt
- 1 cup Sugar
- 3 Eggs
- 1 1/2 cups Plain flour
- 2 tsp Baking powder
- 1/2 tsp Salt
- 1 medium Zest of a lemon
- 1/2 small Zest of a orange
- 1/2 cup Sunflower oil
- For the glaze
- 1/4 cup Lemon juice
- 3/4 cup Icing sugar
Method
- Preheat oven to 175 degrees Celsius Spray tin or line with bake paper
- In a large bowl combined yogurt sugar and eggs stir until well blended
- Add flour, baking powder, salt and zest Lightly mix until combined
- Then add oil and stir well Keep stirring until smooth
- Poor batter into pan
- Bake for 30-40 mins Or until knife comes out clean
- Combine lemon juice and ice if sugar in a bowl stir until smooth Drizzle over cake until soaked and decorate with left over lemon and orange
