These Green Tomato Pickles are so fantastic to have in the cupboard … serve them up with cheese and crackers if friends drop in or add a lot of flavour to any sandwich.


Ingredients (makes 4 )

  • 2 kg green tomatoes (diced evenly)
  • 400grams onions (chopped)
  • 9 table spoons salt
  • 900 grams sugar
  • 750 mls Vinegar
  • 3/4 cup flour
  • 3 table spoons curry powder
  • 1 table spoon tumeric

Method

  1. **DAY ONE**
  2. Wash and dry tomatoes and onions evenly
  3. In a large saucepan layer 1/3 of the tomatoes / 1/2 the onions / 1/3 of the salt continue layering LEAVE OVERNIGHT
  4. ** DAY TWO **
  5. Drain all liquid Boil jug of hot water Pour over mixture and drain again
  6. Do this twice to remove all salt
  7. Put tomatoes on the stove with 450 mls of the vinegar Bring to the boil- cover and cook 10 minutes
  8. Make a paste of flour,turmeric and curry powder with 300 mls of the vinegar -Reserve
  9. Add sugar to tomatoes, stir in , turn off heat and add paste slowly... stirring constantly to avoid lumps Place over low heat and simmer gently for 5-10 minutes
  10. pour into sterilized jars ( to sterilize wash jars in hot soapy water ,rinse .Sit on an oven tray , 120 degree oven for 20 minutes)

They are also a lovely accompaniment to have on a cheese board or serve with cold meat and olives as part of a ploughman's lunch. This recipe makes 4 med- large jars of pickles.

  • What an interesting recipe! I regularly make tomato chutney with ripe tomatoes and never have I tried a recipe where it’s all mixed together and left overnight then drained and rinsed before cooking the next day. I’m intrigued

  • A great way of using tomatoes that haven’t ripened.
    My neighbour made this many years ago. I don’t think she put curry powder or tumeric in it.
    I notice the photo has ripe tomatoes in it. My Mum made ordinary Tomato Chutney. It had sultanacsin it
