Healthy nachos that the whole family can enjoy


Ingredients (serves 2)

  • Sweet Potato
  • Mince meat
  • Spinach Leaves
  • Shredded Beatroot
  • Shredded carrot
  • Shredded cheese
  • Corn kernals
  • Diced tomato
  • Diced Onion
  • Tinned tomatoes

Method

  1. Slice sweet potato and cook at 180 degrees for 30 mins. Dice / shred remaining ingredients.
  2. Fry onion until brown
  3. Stir in mince and tinned tomatoes until mince is cooked
  4. Remove sweet potato from oven and layer with all ingredients onto slices.
  5. Top with cheese and return to the oven for a further 5 mins.
  6. Remove from oven and enjoy

Notes

This recipe can be made vegetarian by removing mince and adding 4 bean mix

  • A nice healthy spin on nachos! I love sweet potatoes so this is on my to make list!
