Unlike the store brought variety these tasty little morsels have no added fat or salt. In fact they are 100% potato, with additional flavours completely optional.

Potato often gets a bad rap however in its unsalted, un-fried state potatoes are actually a great source of vitamin C, B6, folate, potassium, manganese and a host of other vitamins and minerals.

To make your own delicious homemade chips you will need:

500g of potato (Red Delight potatoes are a good choice), washed thoroughly and sliced as thinly as possible, don’t worry about peeling them – the skins add extra fibre.

Now simply arrange the potato slices in a single layer on a microwave safe plate. Microwave on high for several minutes, turning once (if you do fine they start to stick, a good quality olive or canola oil spray can be used). The exact time will depend on your microwave and how thick your potato slices are. Mine took about 7 minutes.

Allow to cool and serve as they are or flavour with herbs or spices. Try dried chilli flakes or dried oregano. If you’re a fan of vinegar chips, soak your sliced potato in white vinegar before cooking. The longer they soak the stronger the flavour will be.

It is important to eat a variety of different coloured fruit and vegetables very day so why not try this with sweet potato and beetroot too!? Not only do they look good, they taste great.

  • These are actually pretty good, I don’t have an oven at the moment so anything that promotes a microwave I’m all over. I used Cajan pepper and a bit of olive oil, quite delicious.
