Lovely served warm with whipped cream


Ingredients (makes 1 cake)

  • 3 Eggs
  • 1 1/4 Cups Castor Sugar
  • 1/2 Cup Vegetable Oil
  • 1 Cup Honey
  • 3/4 Cup Cold strong coffee
  • 4 Cups Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon each Nutmeg, Ginger and Allspice
  • 1/2 Cup Broken Nuts (optional)

Method

  1. Cream together eggs and sugar. Slowly add oil then honey and continue beating
  2. Add sifted dry ingredients, alternating with coffee
  3. Stir in nuts. (I use walnuts) Bake in a greased and floured tin for an hour at 350 degrees fahrenheit

My friend has her own bees and taught me this recipe with her own honey

  • I haven’t tried a honey cake in ages. I have plenty of honey at home at the moment, must give this recipe a try.

  • Thanx for sharing. I prefer to drizzle a cake with honey above baking with it as heated honey destroys the nutritional value.
