You can also add 1/2 teaspoon of mixed spices, cinnamon or nutmeg. Beautifully moist cake – store in an airtight container, but put baking paper underneath.
Ingredients (makes 1 cake)
- 2 Eggs
- 1 Cup Sugar
- 3/4 Cup Vegetable Oil
- 3/4 Cup Honey
- 1/2 Teaspoon Baking Soda
- 1/2 Teaspoon Cloves
- 2 Tablespoons Cocoa
- 1 Cup Plain flour
- 1 Cup Self raising flour
- 1 Cup Boiling water
Method
- Preheat oven to 375f or 190c.
- Mix eggs and sugar.
- In the following order mix in oil, honey, baking soda, cloves, cocoa then flour. Add the boiling water last.
- Bake for 1 to 1 1/4 hours. Lower heat to 350 (180) after the first half hour. Lower heat again to 325 (150) for the last 10 minutes.
- Sift iciing sugar over the top once cool
