A simple Irish stew recipe.


Ingredients (serves 4)

  • 500g Lamb, chunks with fat removed
  • 400g Potato, peeled and chopped roughly
  • 2 Medium onions, coarse chopped
  • 4 Medium carrots, chopped in rounds
  • Tsp Parsley
  • Salt and pepper to taste
  • Worchestershire sauce to taste
  • Vegetable stock

Method

  1. Coarse chop everything into bite size chunks
  2. Put everything but salt, pepper and worchestershire sauce into soup pot
  3. Bring to the boil and cook until potatoes are soft and crush
  4. Add seasoning and worchestershire sauce to taste
  5. Serve in a deep soup bowl

My Mum used to make this when I was a child. Simple, tasty and nutritious

  • Haven’t had Irish stew in years. My fathers use to cook it regular. It was lovely on cold winter days with some crusty bread. I will have to make it for the family soon.
