Quick and easy cookies.
Ingredients (makes 20 cookies)
- 2 Eggs
- 3/4 cup Sugar
- 2 cups Self raising flour
- 1/2 cup Strawberry jam
- 125 grams Butter
- Preheat oven 180C.
- Cream butter and sugar. Add eggs one at a time and beat in.
- Add flour and mix into a stiff dough.
- Break dough into 20 small pieces and line in baking tray. Make hole in centre with a cork or back of a spoon, and fill with jam.
- Bake for 15 minutes. Cool in cooling rack.
