Quick and easy cookies.

 


Ingredients (makes 20 cookies)

  • 2 Eggs
  • 3/4 cup Sugar
  • 2 cups Self raising flour
  • 1/2 cup Strawberry jam
  • 125 grams Butter

Method

  1. Preheat oven 180C.
  2. Cream butter and sugar. Add eggs one at a time and beat in.
  3. Add flour and mix into a stiff dough.
  4. Break dough into 20 small pieces and line in baking tray. Make hole in centre with a cork or back of a spoon, and fill with jam.
  5. Bake for 15 minutes. Cool in cooling rack.
