A tasty cheesecake type jelly slice!


Ingredients (serves 12)

  • 375g Cream cheese
  • 250ml Cream
  • 250ml Cream, whipped
  • 250ml Condensed milk
  • 1 packet Milk arrowroot biscuits, finely crushed
  • 1 packet Jelly crystals
  • 1 tbls White vinegar
  • 2 tbls Lemon juice
  • 1 tsp Lemon rind
  • 1/3 cup Butter, melted
  • 1 Sachet gelatin

Method

  1. Prepare jelly crystals as per instructions on packet set aside to cool.
  2. Mix crushed biscuits and melted butter, once combined line a tart tray evenly and place in fridge.
  3. Place cream cheese, condensed milk, cream, vinegar, lemon juice and rind in to mixer and mix until well combined and smooth in texture. Add gelatin and mix well, add whipped cream folding in until combined.
  4. Pour cream cheese mixture into biscuit base. Once jelly has cooled pour over the top. Place in fridge until jelly has set, a minimum if 1 hour, preferably overnight.

Notes

You can omit gelatin, as this slice will set overnight without it! Any flavoured jelly works, served with some fresh fruit e. g Strawberries, Raspberry or Mango. A little slice I whipped up one Sunday bake session and to my surprise the family like it!
