An Aussie favourite.

Ingredients (makes 15 Lamingtons)

  • 1/2 cup Butter
  • 3 Eggs
  • Pinch Salt
  • 1 teaspoon Vanilla essence
  • 3/4 cup Sugar
  • 1 1/2 cups Self raising flour
  • 1/2 cup Milk
  • 2 cups Icing sugar
  • 1 tablespoon Butter
  • 1/3 cup Cocoa
  • 1 teaspoon Vanilla essence
  • 3 cups Coconut
  • 4 tablespoons Boiling hot water
  • 1/2 cup Milk


  1. Turn oven to 180 degrees celcius.
  2. Cream the butter & sugar together for about 8 minutes. Then beat in eggs & vanilla, mix in flour & milk with the mixture.
  3. Pour the mixture into a greased square baking tray. Place in oven & bake for 30 minutes. Allow cake to cool. Once cooled cut into squares.
  4. To add the icing, add last 7 ingredients except for the coconut with boiling water in a bowl until it is quite thin. Coat the square pieces with the icing. Finally roll the lamingtons in coconut.


Great party food & especially good with a glass of milk.
