Delicious lemon and coconut cupcake recipe

Ingredients (serves 12)

  • 2.5 cup SR flour
  • 0.5 cup Sugar
  • 0.25 cup Lemon juice
  • 1 cup coconut cream
  • 0.25 Rice bran oil
  • 1 egg


  1. Combine flour and sugar in a bowl. Add lemon juice, coconut cream, oil and egg. Using a wooden spoon, stir until just combined.
  2. Pour batter in muffin tray and bake for 30 minutes on 190C.
