A versatile frosting which is great on most cakes and cupcakes.


Ingredients (makes 12 Thick cupcake toppings)

  • 250 grams Cream cheese
  • 2/3 cup Icing sugar
  • 2 Lemons (juice only)
  • 1/3 cup Sour cream

Method

  1. Put the cream cheese and icing sugar in a bowl and beat until combined. I find this helps to avoid lumps.
  2. Add the lemon juice and sour cream. Beat on high for around two minutes.
  3. The frosting should look light and fluffy.

Notes

I find the sour cream stops the frosting going hard. You could also add finely grated lemon rind for a stronger lemon flavour too.
