Brownie Wonder (Gluten Free, High Protein, Low Sugar, Dairy Free, Vegetarian)


  • 2 cups shredded zuchini
  • 1 cup almond butter
  • 1 1/2 cups cocoa nibs
  • 1 egg
  • 4 dried dates
  • 1/4 cup apple sauce
  • 1 vanilla bean pod (inside only)
  • 3 tbsp cacao powder
  • 1 tsp baking powder


  1. Preheat oven to 180.
  2. Place all ingredients in food processor and combine.
  3. Pour mixture into greased or parchment paper lined pan.
  4. Place in oven and bake for 45 mins.
  5. Wait until brownies are cool before cutting and removing from pan.

If desired add cinnamon, chai spice, or even chili for some exotic flavour.  Serve it up for a delicious desert with some coconut yoghurt and berries.

Cook once, eat twice: Store in your refrigerator in a well sealed, glass tupperware for optimum freshness.  A couple of batches will last you for lunchbox snacks all week.
