Easy and delicious banana bread


Ingredients (serves 12)

  • 3 Overipe bananas (Large)
  • 1 T Lemon juice
  • 120gm butter
  • 1cup coconut sugar
  • 2 t vanilla essence
  • 2 eggs (whisked)
  • 1 T Cinnamon
  • 1 t salt
  • 1 T Baking soda
  • 2 cups Plain flour
  • 1/2 cup Buttermilk

Method

  1. Preheat oven to 185C.
  2. In a medium bowl, mash bananas until creamy and stir in lemon juice. Set aside. In another bowl, whisk together flour,baking soda, cinnamon, and salt. Set aside.
  3. In a large bowl, cream together the butter and coconut sugar. Add in eggs and bananas.
  4. Add vanilla and buttermilk.
  5. Stir gently and make sure you don't over stir them otherwise they will be dry.
  6. Pour batter in a loaf pan and bake for 1 hour.

  • Banana bread is an absolute favourite – just so sweet and delicious.

  • Just made this, its in the oven. Didn’t have lemon juice, used cranberry instead. Smells good so far!

  • Mm just made this. Really easy, has all the ingredients. I love the added lemon juice. I put foil onto the banana bread for the first half to try and not let it brown too quickly as I always make them too crusty on the outside. Thanks for the recipe
