This Mexican Layer Chicken Bake is an all time favourite with everyone!


Ingredients

  • 8 tortillas
  • 3 cups cooked chopped chicken
  • 1 tbls olive oil
  • 1 onion, chopped
  • 1 cup red capsicum, chopped
  • 1 can kidney beans
  • 1 can corn
  • 1 tsp chilli powder
  • 3 cups salsa
  • 1 1/2 cups sour cream
  • 1 1/2 cups cheddar cheese
  • 1 1/2 cups mozzarella cheese

Method

  1. Preheat oven to 200 degrees. Spray a casserole dish large enough to fit tortillas. Heat olive oil in pan and cook onion and capsicum for 5 minutes, until softened. Mix in chili powder, remove from heat, stir in black beans and corn.
  2. In a medium bowl, mix salsa and sour cream.
  3. Layer tortilla, salsa mixture, chicken, tortilla, vegetables, cheeses. Repeat 4 times, or until you reach the top of the casserole. Top with cheese. Cover and bake for 25 minutes. Uncover and bake 10-15 minutes longer or until cheese is bubbly and browning. Let stand for 10 minutes before serving. Sprinkle with a little salt and pepper or herbs to taste.

  • I think if I left out the chilli powder – because we’re wimps! This would go down really well.
