This is so easy it should be illegal. you can omit what you dont like and put in what you do its that easy 🙂 evaporated milk can also be used instead of light cream
Ingredients (serves 4)
- 4 chicken thighs skin off
- 1-10 button mushrooms as much or as little as you like
- 1 600 mls light cream ( i have also used normal heavy cream as well )
- 4-6 rashers of diced bacon
- Parmesan cheese
- 2 chicken stock cubes
- 4 spring onions ( more or less)
- 1pkt Fettuccine or penne or any pasta really
Method
- poach chicken ( my fancy word for boil ) in water until just cooked then cut up into bite sized pieces
- finely slice mushrooms and spring onions and sweat down and set aside
- toss everything but the pasta in a frypan add in cream and crumble the 2 stock cubes over also roughly a handful of grated parmesan cheese and let simmer gently for 20minutes or until the sauce thickens
- cook pasta as per directions on the packet
- serve sauce over pasta and enjoy
