Delicious no bake slice that’s quick and easy to make, perfect for the school lunchbox!


Ingredients (serves 12 | makes 12 Oat bars)

  • 1 1/2 tbsp Coconut oil
  • 1/2 cup Peanut butter
  • 1 tsp Vanilla
  • 2 tbsp Honey
  • 1 tsp Cinnamon
  • 1/2 cup Rolled oats
  • 1/3 cup Flaxseed meal
  • 1 tbsp Chia seeds
  • 1/2 cup Chopped almonds
  • 1/3 cup Coconut
  • 100 grams Cooking chocolate
  • 1 tbsp Coconut oil
  • 2 tbsp Chopped almonds

Method

  1. Melt peanut butter, coconut oil, honey, vanilla and cinnamon in a pot over a low heat. Heat until combined.
  2. Add oats, flaxseed meal, chia seeds, almonds and coconut. Stir until combined.
  3. Line baking tray with baking paper and pour mixture in. Level out pushing down with the back of a spoon.
  4. Melt chocolate and coconut oil in a pot. Drizzle over the top and sprinkle chopped almonds on top.
  5. Put into the fridge for 2 hours. Cut into bars. Serve and enjoy!

  • will be great for work lunchboxes, unfortunately many schools cant have nuts at them, so Ill try this one to have at home and look for another nut free one for the kids.

  • This will have to be eaten at home – schools almost all have a no nut policy these days. But it does look delicious for those of us who don’t have a problem.


    • Luckily at the school of my kids nuts are permitted andI often put nuts in their lunchboxes :)
