This paleo chia coconut, mango & berry parfait is sure to be great hit for dessert at the Christmas table!
Ingredients (serves 4)
- 1/4 Cup chia seed
- 1 cup coconut milk
- 3/4 cup mixed berries (fresh or frozen)
- 1 whole mango - peeled & diced
- 1 Tbsp honey
- 2 Tbsp shredded coconut
- Soak chia seeds in coconut milk, honey & mixed berries overnight.
- Next day layer the soaked chia-berry mixture with diced mango into a parfait glass - sprinkle grated coconut on top. Chill in the fridge till ready to serve.
