Ingredients (serves 12)

  • 1/2 cup Coconut oil
  • 6 Eggs
  • 1/2 cup Honey
  • 2 tsp Vanilla essence
  • 1 pinch Seasalt
  • 3/4 cup coconut flour
  • 1/4 cup shredded coconut
  • 1 Large banana (Mashed)


  1. In a large bowl, whisk first 5 ingredients until well combined.
  2. Add in coconut flour and mix well with a spatula. Then add in bananas and shredded coconut. Mix well.
  3. Pour the batter in a prepared loaf pan and bake for 45 minutes under 185C.
  4. Make sure you wait for the cake to cool completely before cutting. Store remaining in fridge for up to 2 days.


This coconut bread is so moist and delicious that you will want more!
