Ingredients (makes 24 Balls)

  • 1 packet Philly cream cheese - softened
  • 1 Can Crushed Pineapple - drained
  • 2 1/2 Cups Flaked Coconut

Method

  1. In a small bowl, beat cream cheese and pineapple.
  2. Cover and refrigerate for 30 minutes.
  3. Roll mixture into 1-inch balls. Roll in coconut.
  4. Refrigerate overnight.

Notes

Very quick and not too sweet so great for parties on hot days

    When my Mum was pregnant with me she craved a thing called hawaiian Rice…it had pineapple and coconut in it….i always loved that as a special dessert….i bet she would have loved these as well
