This sorbet is quick & easy – a very refreshing dessert!

Ingredients (serves 6)

  • 2 x 400 gram tins Pineapple (retain the juice)
  • 6 Fresh mint leaves

  1. Blend the tinned pineapple (including the juice) with the fresh mint. Pour into an ice cream maker and churn for approx. 25 mins until a thick consistency.
  2. This is nice with a splash of Midori Liquor (for the adults only) or a small scoop with a glass of champagne.

  • I do have some frozen pineapple & mint growing in my garden patch, will try this out.

  • This has really got me wishing it was summer.

  • Perfect for a hot summer day.

  • What a refreshing way to complete a meal. I like the idea of adding Midori.

  • What a lovely combination, so yummy!

  • It’s a simple and easy menu that sounds yummy so I have to try.

  • Seriously? That easy. I don’t have an ice-cream maker though.

  • Nice. I would prefer to use fresh pineapple though, as tinned pineapple and juice are quite refined.

  • I’m making this with lime juice and palm sugar.
Add this to a dash of soda water and you have a drink similar to the one they serve at Jim Thompson’s silk store in Bangkok.

  • Wow this looks sooo refreshing ..wonderful for the coming summer. thanks for sharing.
