The is an adaption of a Thermomix recipe that I love. I’ve added the corn kernels and grated cheese for the kiddos to enjoy!

Pork, Apple & Cheese Rissoles


Ingredients (serves 4)

  • 500g pork mince
  • 2 pink lady apples, peeled & grated
  • 2 tbsp tinned corn kernels
  • 2 tbsp grated cheese
  • 2 pinch salt
  • 1 pinch black pepper
  • 1 pinch chilli flakes (optional)
  • 1/2 tsp garlic powder or 2 cloves garlic crushed
  • 1 tbsp panko bread crumbs

Method

  1. Peel and grate apples. Squeeze out excess apple juice.
  2. Combine all other ingredients well.
  3. Form into patties the shape that you would like; can be larger adult size, smaller kids size, or even meatball shape
  4. Preheat a nonstick pan with olive oil. Pan fry over a medium heat until golden brown & cooked through (about 5 minutes each side).
  5. Serve with tomato relish, simple garden salad & garlic mash.

  • These worked out so well, i also made a chicken and pork batch. Everyone loved them. I’m not sure what sauce to suggest so the most popular was aioli for the chicken and sweet chilli for the pork

  • Considering pork Mince is cheaper than beef at the moment I’ll have to give this one a go on the weekly dinner rotation. Looks pretty tasty
