Ingredients (makes 24 toasts)

  • 24 med cooked prawns peeled,deveined and chopped
  • 2 mangoes peeled, seeded and chopped
  • 1/4 cup Mayonnaise
  • 1/4 cup chopped mint
  • 1 lime..... juice and finely grated rind
  • 1/2-1 long red chilli seeds removed and finely chopped
  • 1/4 cup olive oil
  • 1 long baguette sliced into 24 slices

Method

  1. In a medium bowl combine prawns,mango,mayonnaise,mint ,lime rind and juice and chilli
  2. brush bread with oil and lightly toast both sides
  3. Either top bread with mixture and serve or serve in a bowl for people to top their own

Notes

So light in and fresh flavor, a definite hit with guests. I find it better to serve in a bowl for guests to help themselves , because if you top them too early they can go soggy

    • They are a fabulous combo for sure – but then again I love prawns with most foods and in most recipes – prawns fan! :)
