These prawns and salad are a family fave that cooks in minutes and everyone loves!¬†Every time I cook this, I have to share the recipe….. so Mums, here it is!

Ingredients (serves 4)

  • 1/4 cup olive oil
  • 5 cloves crushed garlic
  • 3 red chillies, chopped
  • 700 grams green prawns (shelled)
  • 50 grams butter
  • bunch spring onions, chopped
  • bunch parsley, chopped
  • packet rocket
  • 1 lemon, cut into wedges
  • crusty bread


  1. GARLIC PRAWNS: Cook the garlic and chilli in the oil, toss the prawns in and the butter too. Season with pepper and add the greens.
  2. Take the pan off the heat and pour onto a serving dish with lemon wedges around edges.
  3. GREEN SALAD: On a large platter scatter a packet of baby spinach leaves, toasted walnuts, avocado slices, chopped anchovies and dress with a caramelised balsamic. And, that is it! Quick easy and looks posh.
