A sweet pumpkin loaf


Ingredients (makes 2 loaves)

  • 2/3 cup butter
  • 1 cup sugar
  • 4 eggs
  • 2 cups cooked mashed pumpkin
  • 2/3 cup water
  • 3 1/3 cups plain flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp cloves
  • 2/3 cup coarsly chopped walnuts or almonds
  • 2/3 cup raisins

Method

  1. Heat oven to 165 degrees fan forced. Grease two loaf pans.
  2. In large bowl, cream butter and sugar until fluffy. Stir in eggs, pumpkin and water. Blend in flour, soda, salt, baking powder, cinnamon and cloves. Stir in nuts and raisins.
  3. Pour into pans. Bake about 45 minutes or until skewer inserted in center comes out clean.

Notes

You can also add a few chocolate chips to the mix.

  • I have made a pumpkin loaf in the past. It never worked out.
    I steamed the pumpkin and mashed. Then baked the cake.. The next day it tasted foul like it was off. Any suggestions why? Thanks,
