Ingredients (serves 4)

  • 1/2 pumpkin
  • 1/2 cup cous, cous
  • hand full diced capsicum & onion
  • 1 1/2 cups baby spinach

Method

  1. Dice pumpkin and boil til soft. Put in fridge to cool
  2. Make cous cous. Put in bowl with pumpkin. Add capsicum and onion.
  3. Add Baby Spinach and mix with honey mustard dressing.
