This quiche is easy and delicious! Of course you can multiply the ingredients to make multiple single serve quiches.


Ingredients (serves 1)

  • 2 beaten eggs
  • crack of pepper
  • 1 shallot
  • 2 tablespoons sour cream
  • 1 rasher of bacon
  • a few spinach leaves
  • 1 sheet of pastry
  • small handful grated cheese

Method

  1. Preheat oven to 180 degrees. Fry shallot and bacon.
  2. Place pastry in pie mould.
  3. Cut spinach and add to the bacon mix, then add to the pastry case.
  4. Whisk egg and sour cream together and add to the pastry case - gently stir.
  5. Sprinkle with cheese.
  6. Bake in the oven on 180 degrees until firm and golden (Approx 20 minutes).

  • Whoa, this is so good for single life which is me when hubby does his 30 day carnivore diet and I’m only cooking for myself. I can’t handle eating the same thing two days in a row so this is just perfect. Thank you so much for sharing. Have bookmarked it for the next 30 stint.

  • Great single serve dish. I would add more spinach and leave the bacon out, but then I’m a vegetarian who loves her veggies :)
