We love these quick, easy and tasty chicken parmigiana rissoles. They are bite sized little mouthfuls and have a lovely texture and flavour.


Ingredients (serves 4)

  • 500 g chicken mince
  • 1 egg
  • 1 onion, finely chopped
  • 1 tsp mixed herbs
  • salt and pepper(optional)
  • 1 tbsp olive oil
  • 300 g chunky tomato salsa
  • 60 g cheddar cheese, grated

Method

  1. Combine the chicken mince, egg, onion, mixed herbs and salt and pepper in bowl. Gently mix.
  2. Make small patties with Tbsps of the mixture.
  3. Heat oil and gently fry over medium heat for 3-4 minutes. Turn the patties and spoon a little salsa onto the top of each patty. Sprinkle with cheese. Cover and cook for a further 3-4 minutes until cooked/cheese melts.

Notes

Beef, pork or your preferred mince can be used in this recipe.
