Very quick and easy salad for dinner. It is also extremely filling. You could also top it with some feta for extra flavour.


Ingredients (serves 8)

  • 2 Tablespoons olive oil
  • 3 Tablespoons lemon juice.
  • 1/4 teaspoons Red Pepper flakes
  • 1 Large Tomato diced
  • 1 Cucumber diced
  • 1 Green Capsicum diced
  • 2 Spring onions chopped.
  • 1 1/2 cups Prepared Pearl Couscous
  • 1/4 cup Chopped Parsley
  • 1/4 teaspoons Sea salt
  • Fresh ground pepper to taste.

Method

  1. Whisk together olive oil, lemon juice and red pepper flakes to form your dressing.
  2. In a large bowl toss together tomato,cucumber, capsicum, spring onions, and cooked pearl couscous. Add Parsley and dressing tossing well to combine.
  3. Season well with Sea salt and Pepper.

  • I often use couscous in salads but admit that I’ve never heard of pearl couscous. Is it very different to ordinary couscous?
