A tasty mexican chicken dish which the whole family is sure to love.


Ingredients (serves 2)

  • 4 Chicken fillets
  • 1 pack Taco seasoning mix
  • 1 large jar Mild salsa sauce
  • 2 cups Grated cheese
  • 1 Onion diced
  • 1 Red capsicum diced
  • 1 cup Beans
  • 1 cup Peas
  • 1 tsp Turmeric powder
  • 1 cup Rice

Method

  1. Preheat oven to 180 degrees celcius.
  2. Slice chicken fillets in half and coat with taco seasoning mix. Place in an oven safe dish and pour over contents of salsa with onion, capsicum, peas, beans and cheese.
  3. Place in oven and cook until chicken is tender.
  4. Meanwhile steam rice and add turmeric until rice is fluffy.

Notes... You can use other vegetables, e.g. green capsicum, zucchini, olives or whatever takes your fancy. This is a great way to use opened jars of salsa which need to be consumed within a few days.
