Yummy healthy damper.


Ingredients (serves 4)

  • 1/2 cup White Quinoa
  • 1 cup Boiling water
  • 2 1/2 cups Self raising flour
  • 1/2 cup LSA meal
  • 2 Tbsp Black Chia
  • 1tsp Salt
  • 60 g Butter
  • 1 cup Milk
  • 2 Tbsp Pepitas

Method

  1. Preheat oven to 200 degrees. Place quinoa in a bowl and add boiling water. Set aside for 20 min. Drain well.
  2. Combine flour, LSA meal, chia and salt in a bowl. Rub butter until combined. Make a well, add milk and quinoa. Mix everything with a knife.
  3. Divide the dough in 4 pieces. Shape each piece into a round damper. Brush with extra milk. Sprinkle with pepitas. Place on a tray and bake at 200 degrees for 40 min or until golden. Serve warm with butter.

Notes

So easy to make.
